Murals at Restaurant Geranium
– An Artistic Tribute to Sustainability, Biodiversity and Nordic Nature.
When art and high-end gastronomy meet, magic happens. That was precisely the case at Restaurant Geranium in Copenhagen, where my murals became part of the overall experience in one of the world's most recognized restaurants. Geranium, which has achieved no less than three Michelin stars and has been voted the world's best restaurant. With Rasmus Kofoed at the helm, they are known for their plant-based and innovative approach to gastronomy.
My mural art project at Geranium wasn't just about aesthetics – it was a visual extension of the restaurant's philosophy of nature, balance and sustainability, which is completely in line with my own artistic practice.

Murals with a light and airy interpretation of Danish Nature
The murals were created in a light Nordic style, where the art was to support the gastronomic experience without overwhelming it. The colors were carefully coordinated to harmonize with the elegant and calm atmosphere of the restaurant, while maintaining a lightness that allowed the food to remain the center of attention. The murals were to harmonize with the sensory space created in a Michelin restaurant, where there is focus on even the smallest detail.

Only edible plants from the wild Danish nature were painted on the walls – an artistic move that emphasized Geranium’s uncompromising approach to local roots and wildly inspired ingredients. From delicate herbs to robust wildflowers, these motifs created an organic and earthy atmosphere that allowed guests to sense the connection between the plate and nature.
Insects and my little women become a reminder of the importance of nature being in balance. Humans are not alone in the ecosystem, and to emphasize how important it is that everything in nature is in balance, small insects also found their way into the murals. Butterflies, bees, ants and spiders were incorporated into the botanical motifs as a discreet but significant detail.
These tiny creatures are essential to biodiversity – bees pollinate, spiders keep pests at bay, ants clean the forest floor, and butterflies spread the beauty of life. Just as a perfectly composed dish requires balance, our entire ecosystem depends on the interaction of these small, often overlooked, players.


When Art and Gastronomy Melt Together
The murals at Geranium became not just a decoration, but a an integral part of the overall restaurant experience. They created an atmosphere where guests could immerse themselves in the universe of food and at the same time let their gaze wander through a Nordic landscape of flavors, scents and colors.
The fact that Geranium was later named the world's best restaurant is a recognition of the place's unique holistic approach. Here, innovation and tradition, gastronomy and art, craftsmanship and nature meet – all in perfect harmony.
It has been a great honor to contribute to this art project, and I hope that the murals will continue to remind guests of the connection we all have to nature – both on our plates and around us.
